Add coconut milk, stock, lemon zest, brown sugar, fish sauce, and lemongrass stalk. Then finished with the mixture with rice vinegar. as it might be with other recipes. Basically follow this recipe but sub green curry paste, add in like leaves and Basil before the long simmer. I make this at least once per month. Its spicy, so use less if you arent a huge spice lover, or more if you love your eyes to water lol.

It's easy to crush a stalk of lemongrass(only the white part) to add flavor to the curry. -Subbing broccoli for thick sliced mushrooms and/or green pepper I also included some cheap thin steak to go with the chicken. This one is a winner! Add the rinsed rice and continue boiling for 30 minutes, reducing heat as necessary to prevent overflow. I also added cayenne pepper, and Jalapeos to make it more spicy. I wonder if theres something else I could add to the curry to thicken it up a bit?

Great to hear! . The whole family loves this recipe and were able to use so much from our garden. This dinner got an outstanding review at our house. Add chicken; heat through. Using full fat coconut milk I think is key + its very filling so was totally fine without adding meat. I didnt think it was very spicy at all, just perfect according to the directions. Then after a bit of a simmer I add in the peppers (and bamboo shoots because I love them), coconut milk, and wait til the peppers are soft then add the rice vinegar, sugar and soy sauce. I appreciate your review. Added seitan, which I made for the first time and boy was it delicious in this dish. Serve over rice with more garnishing of basil and fresh coriander leaves. Yumm!

The only thing I would note is dont forget to wash your rice and feel free to cook it in either beef or chicken broth in lieu of water. This recipe was really delicious. I used 2tbsp of the curry (instead of 3) because I am cooking for tiny humans, and it was plenty spicya bit too much for the kids actually, so just keep that in mind if you are sensitive to spice or preparing for small kids. To cook the rice, bring a large pot of water to boil.
I doubled the curry paste, increased ginger by 1-1/2. Made this recipe couple of times and it always turns out amazing. Help!!!! Mine didnt look very bright so presentation wasnt great but that may be due to the dark soy sauce and oyster sauce I added. Everyone enjoyed it!

Hi Kate! Just wondering how spicy this is. When I make other curry dishes I use heavy cream or heavy whipping cream with tomato paste. I could drink this from a glasss its so good! Id hold off and do like the recipe says, wait to add salt at the end to taste. It didnt seem like it was doing anything, and then when I added the vegetables, there wasnt much left. But unfortunately, without further recipe testing, I cannot answer with certainty regarding the change in cooking time. The recipe is so versatile, thank you for sharing it! Weve made it twice in 3 days! They would eat Thai food everyday if they could. Rather than letting the coconut milk reduce ( I really wanted that sauce!) It should work fine. Fish sauce is a must.
